🥚Separate the eggs. Beat the eggs with 120g of sugar until you obtain a smooth mixture.
🧀Add the mascarpone cheese and the mixture until you obtain a smooth cream. Gently fold the beaten eggs into the mascarpone mixture
🍳with the remaining sugar and a pinch of salt until firm. Place a layer of cookies in a mold and lightly brush with coffee, without over-brushing. Add a layer of cream on top of the cookies. Repeat the layers: cookies, cream, and cream. Dust with pure cocoa powder using a little food coloring. Refrigerate for at least 12 hours to allow the flavors to intensify.
